Holiday Cocktails with Martini’s Rosso Pink Vermouth

Rosato + Chambord Unquestionably, our favorite holiday cocktails last year were ones based on Martini’s Rosso Vermouth.  While Glenn enjoyed this pink Vermouth chilled, on the rocks during the summer months, I felt that the Rosso’s spicy aromas and flavors – particularly those of cinnamon and clove – make it a natural for festive Christmas-time libations.

Chef Nigella Lawson’s popular “Pomegranate Christmas Cocktail” played off one of Rosso’s two dominant fruit flavors, making for a refreshing, low-alcohol cocktail. I made two versions that replaced the ginger ale in Nigella’s drink with inexpensive Cava for a slightly different take.

With the holiday season in full swing, I have been thinking of other variations, and decided to play up the other fruit flavor – raspberry.  After a bit of experimenting with proportions, I found that the following makes a tasty drink:

Combine 1 Part Chambord and 2 Parts Martini Rosso in a shaker with ice. Shake well. Pour into a glass and top with about 1 Part club soda or seltzer. Garnish with raspberries and/or pomegranate seeds.

Another iteration is straining the Chambord and Rosso into a Champagne flute and topping with Cava.  Again, you can add raspberries and/or pomegranate seeds for a pretty garnish.
